I like ot make tomato powder for thickening soups and stews.
That's a good idea. I have 4 or 5 bags of potatoes in the pantry right now... I might dehydrate some of them. Does it smell funky at all? I have to run it indoors and am thinking it may produce a funky earthy/dirt smell.

EDIT: Oops, I read "potato" and now realize you wrote "tomato". LOL.
Anybody dehydrate potatoes though? I would thick potato powder/flakes would make a great thickener. Can I sub it for potato flour even?

no they don't stink.
The only thing that I've found stinky is garlic and onions and jerky.
125 for 10+ hours

YOU MUST slice and keep them in water and MUST blanch them before dehydrating or they turn brown and them black IMMEDIATELY. GROSS!

You can shred them too. Dump shreds immediately into water and also must be blanched.
 
I got 16 pints of cinnamon Applesauce canned, and I used the last bit of frozen blueberries to make 4 pints of Blueberry Pie Filling.
I found a recipe to make 1 quart of Blueberry Pie Filling and I doubled it so I could use all the rest of the blueberries I had left. It was really handy.

@BirdsBeesTrees Did your recipe for blueberry pie filling have you add food coloring to the filling? Those jars look so yummy!

It looks like you put lots of cinnamon in the applesauce. When I make applesauce, I have to keep adding cinnamon until DH says it is good.
No I didn't add food coloring. I froze the blueberries and when I thawed them out I saved the juice and used it in the place of water.
I used 2 tablespoons of cinnamon per 48 cups of apples in my applesauce. Even with the lemon juice the applesauce browned some. We ate some last night and it was amazing!
 
I was digging up some of the grass that's invading the edges of the garden, just because it was a nice day and there won't be too many more days I want to play in the dirt. My weed digging/pulling muscles will be glad for some time off.

I found a missed onion in the onion row; it'll go into tomorrow's spaghetti sauce.
