No THX! - I don't want to spoil anybody's appetite, but once you have seen the disgusting process being used in (at least some!) food factories you won't be able to eat Sauerkraut again ever.
I don't mean your Sauerkraut, @Magnolia Ducks! I am very sure you kept everything clean and had covered your pickle glass with fabric so that no mosquitos could breed in the liquid… I need to shut the duck up!

I use plastic, to cover the crock. And a huge rock to sink the plate to keep the kraut down.

Krauts are best when kept down.

I used a glass container with a glass lid and glass weights so everything was very clean. I didn't even get any yeast to skim. Mosquitos made me shudder. I didn't even know there were mosquitos in Germany. I guess I've mostly been there in colder months.
