That is a good stash of eggs. It's time to take about 2 dozen to one of your favorite church ladies and hope she makes you a cheesecake. I was sitting right at 4 dozen last night until I used a dozen for dinner. French toast for the family, and a fried egg on the side for Rosie. Since I had a stash went ahead and bought the rest of the stuff at the store for a homemade cheesecake sometime this week. Have not made one since sometime in February.

So, are they being held upside down in this position?
Probably answered but no, I'm not holding her upside down. I haven't examined feet this way exactly but you can picture that when their legs go back like in their leg stretch, the foot can be flexed revealing the bottom. When I have a hen on a towel or good surface I can hold her from moving forward with my right hand and gently pull one leg back and see the foot bottom briefly. They are standing on the other foot. I think the football hold would be better to really get a good long look.

It's a simple New York style base that you can tweak depending on your mood. Sometimes add orange zest instead of lemon or both, or occasionally Bailey's Irish cream. The key though is fresh eggs, it tastes 10x better with fresh eggs instead of store bought junk. I'm not sure if the recipe calls for it, but when we make it for every package of cream cheese used we add 1 whole egg. Also if you really want to kick it up a notch we'll make lemon curd to add on top. We got that recipe out of the book that came with mom's instapot pressure cooker. Here again, fresh eggs is the key. I've gotten spoiled, anymore when it comes to baking if I do not have fresh eggs to use I do not bake. While I'm looking forward to the cheesecake, what I'm really waiting on is the apples on the tree to ripen. I don't know the variety, it's a really old tree but the apples are perfect for a good tart apple pie. They are close, I think by maybe Thursday they will be ready and then it's game on. I've been waiting on my pie forever it seems.

The picture below shows my chick Jelly at the age of 9 weeks (she is currently 3 months and a little older (i'll get a new picture of her today). Her tail is growing pretty big and got a lot of green feathers, but her (hopefully) comb should be 3 times bigger if she was a rooster and she really have a LOT of green feathers. Her saddle feathers are not exactly sharp and pointy and shiny (actually yeah I guess very shiny) nor round like hen's. I am really, really having a hard trying to figure out whether she is a pullet or a cockerel. (Jellyfish, but I likes to call her Pennyfish or Jello, too) Any help?
Judging by this picture I'd agree with pullet. An updated picture will tell for sure.

I think she’s a pullet, but time will tell!
