I sure you have picked up from @Shadrach that the biggest concern when roosters fight is stress on the heart. I think you are right to be concerned about Theo if his comb is turning black now. You will need to keep track of any fight that might occur so he doesn't over exert himself. I'm sure Shad can provide additional advice as he is the expert on roosters.
I think it will take some time before Gaston stands his ground and eventually it gets to a fight. For now it's just a lot of running and squeaking.
However stress certainly is Théo's problem. He has a number of reasons : he is molting, his one and only Chipie tried to cheat on him with Gaston, there have been hawks around again for the last three weeks, and this week we made a huge mess with my partner working to cover the run in front of the coop. And he doesn't yet know I'm changing their feed 🙁. Some of his problems should be over soon, so hopefully he will feel better. I keep an eye on them almost constantly, but that won't stop a heart failure if it's meant to happen.
Could you part Theo from the other littler guy for now 🤔
Théo is older (around one year old) but much smaller than Gaston, who's a huge 21 weeks cockerel that is still growing up. It's not so simple to just separate them, because they each have their hens, the ex-batts for Théo, and his hatch sisters for Gaston, and taking away a rooster from his hens will completely stress him out.
If it's not possible to keep them together in one big coop and place, we'll either have to re-home one of them, but that would mean taking him away from his hens ( and I would hate to part with either though I am not a hen), or make a second coop in another part of the property, which is not something my partner is ready to do for the time being.
Shadrach would say it's hard to keep two roosters confined together if they don't agree. I think it's too early to say how it will turn out. If Gaston becomes the dominant rooster he could be more peaceful than Théo. In the meanwhile I will try to give them more space during the day by putting Gaston and his gang outside the netted zone Théo considers his territory, and I will also go back to feeding Gaston outside, as food is a big issue with both. It won't solve the problem for the few times we need to lock them up together when we leave.

Cannelle isn't doing great but she is growing back feathers- head and neck are done and tail feathers coming back in.

So the FBA Primer is definitely helpful. But now I am trying not to cry as I hadn’t gotten to the part of the thread where Maleficent died yet. 😢
