We can call her a leghorn if you want. She's a real beauty.

She's a Exchequer Leghorn by breed. And what you said about them being skittish but very friendly is true. She gets very curious, and then runs off like her butt is on fire when something moves, and then comes right back because why not?
It's hard to get her to settle at first but after a bit of negotiation she'll sit and stay for a few minutes. No she does not make dial-up noises while negotiating.
