Yes, around 300. I had bought a sample of what I thought was the iberico, but it ended up being the Serrano. We loved the Serrano so much we didn't think it was necessary to up *another tier*.

We recently stumbled upon another type of salume, called Finocchiona. I want to build a special curing box to go under our house specifically to make this.... and it takes fennel POLLEN fer cripes sake!!! :gig
Yeah the iborico can range from 500 to 1000 depending on the company. I got in trouble for making a sandwich with it one time :oops: don't judge me it goes great with Swiss
 
Rangers are a hybrid that are better than the CX... less health issues... Duluthralphie bred them with CX and is working on what he calls toads as a sustainable meat bird...

When looking at a possible sustainable flock, I was down to Red Rangers and Buckeyes.

Actually, the Iberico was around the same price, but it was MUCH smaller in size. This Serrano is almost 17#s.

PS. I almost lost my chit when a reviewer said something about cutting this meat up in HUNKS for *soup later*. :eek:
