Hey, @rjohns39 , post some recipes for already cooked chicken or turkey!
I take already cooked chicken, shred it, put some broth in with the shredded chicken and thicken it with tapioca starch (that is how I make gravy) and serve over mashed potatoes. I call it chicken gravy.

Oh, and you have to wait for the broth and chicken to be hot before adding the tapioca starch or else it will clump and be a mess. It blends nicely if what you are mixing it in is hot.
 
Simple egg drop soup
fry up some bacon in your soup pot, remove the cooked bacon, cool and chop up.
saute some celery and onion in the bacon fat
Add chicken stock and cooked chicken and bacon.
Bring to a boil. Whip up some eggs and stir them in. for a nice nutty finish, you can add a couple drops of sesame oil. Top soup with finely sliced scallions.

For your Italian variant, use the recipe I gave kiki earlier and add the chicken just before the pasta.

Tex/Mex White Chicken Chili
Cheat and get a seasoning pack from the store
Saute Onion, Celery, garlic, green chili, and jalapeno pepper, follow package directions but use chicken stock not water and add the chicken and white beans after the water. Give it a squeeze of lime juice. Top with sour cream and a bit of cilantro... Serve with a wedge of lime on the side. Pico goes nicely with it as well—but you can't have it.
