I use xanthan gum cause I can't use flour. But most people make a roux. 1T butter, melted. Add in 1T flour and brown over med low heat until golden brown. Slowly whisk in 1C milk. It should be thickened to your liking. You can add in crumbled cooked sausage at this point. You can also use sausage grease instead of butter for the roux.

EDIT TO ADD: And add in your seasonings. Salt, pepper, garlic powder, onion powder, paprika, season salt (was always my fav).

That's a good recipe. If I could suggest something that would make it even better try adding a half teaspoon of cayenne pepper and a half cup of parsley also substitute half the butter with bacon grease. I grew up with a recipe similar to that
 
What? Everyone went to bed early? I ordered a winter jacket today. I really need to get stuff for husband but have zero ideas because if he wants stuff he orders it. Frustrating.
Going to ship the ring to DS tomorrow. Pretty excited about that.

I was gonna post this in the emergency thread but thought I'd hit you up first cuz...well, you are my fraaands! :) And if I already asked I apologize, but it's hard to keep track on here sometimes.

Anyway, my one laying pullet, Big Bird (Silkie, 7 months old) has been laying pretty steadily for exactly a month. if she doesn't produce an egg a day, it's every other day. I switched her and her coopmates over to Purena Layena a couple weeks ago.

I've noticed over the last couple weeks that she looks and feels thin. Acting normal, good appetite, just thin. Good poops. Prominent keelbone, less flesh. So I've been giving her the occasional egg, extra scratch and BOSS.

So the last week or so, she's been staying in the coop and her nest box. If I pick her up and take her out she'll hang out with the other chickens, but she's really been wanting to stay in there, and she makes these soft little clucking sounds. I thought, maybe she is going broody? But she is still laying, her last egg was yesterday, and I thought they don't go broody till after they stop laying.

Any ideas? I'm starting to get worried, as she is one of my very favorite chickens. The rest are acting fine (and not laying). She is the only one who is thin.

If you haven't already done it, think about putting them back on their other feed, or a combo of it and the layena

What's the secret to sausage biscuits and gravy? Well, the gravy part.

How do ya'll do it?

I keep the temp on medium low throughout. I brown up a pound of bulk sausage (prefer the hot). Then take it out of the pan leaving the grease behind. Add a tablespoon of butter and melt. Figure out how much fat you have in the pan and add and equal amount of flour mixed with Tony's. Keep stirring the flour for at least two minutes, then whisk in milk. Add black, chipolte, and red pepper flake. When it starts to thicken, taste and adjust seasoning. Depending on the sausage, I'll often add a bit of sage. Then add the sausage back and cook to a little looser than desired and turn off the heat. It will thicken as it cools.

Yesterday was homemade biscuits, sausage & gravy, and potato pancakes for brunch.
