Well, you all know me... So here's another very good recipe that most folks scoff at...
Baby Beef liver... Prepared this way, it's very soft and loaded with protein,iron and vitamins...

Start with a pound of your favorite bacon and fry it up in a deep (5qt) skillet. Slice up about four sweet onions. Once the bacon is done, add the onions and little salt and saute them until soft and lightly browned. Remove from grease and put with the bacon. I like to season the liver and flour with Tony's. Either way, season the liver and toss in seasoned flour, then fry it in the grease and put it with the onions and bacon. Use some of your seasoned flour to make a small amount of roux, you're going for a loose gravy that will thicken over time. Add a quart or so of chicken stock to make your gravy, then add everything back ensuring the liver is fully covered and simmer for 45 minutes to an hour. While it's simmering make mashed potatoes, whipped with sour cream and butter goes really nice with this gravy.

When it's done, the liver and bacon cut with a fork and melt in your mouth. You can also do it with chicken liver...
