:old Well I remember when liver was cheap....like $1 a pound or less.

Store chicken livers aren't edible. Brown. Soft. Your own fresh livers: red & firm, shiny. They are the reason to butcher your own, so you can eat them that day. It is like fresh fish, it is not the same after the commercial/industrial complex processes them. Gizzards need more cleaning, and are tougher. I fry them with onions, then add rice-a-roni and cook 40 min. Even store gizzards are good that way!
