Chicken stock that I will can. I've got a bunch of carcasses & feet in my freezer, so I'm planning on pulling a couple out every other week and get the canning done. Using the big pot is just too much work unless we have a long weekend.

It really is a lot of work running a big pot of stock.

When my kids were little and beef bones were inexpensive I used to do big pots of beef stock. My daughter has good allergies so EVERYTHING was from scratch to avoid reactions. I didn't can it but did freeze it.
 
It is most efficient for me to make and can about 90 quarts of stock at a time... But by the time you cook it down, strain it and start jaring it, it's a LOT of work and takes way too much time. I used to start on Friday afternoon and finish up Sunday afternoon.

This way it's way less work and I can use the herbs from my garden as they'll re-grow in between cycles.
 
Well y'all tomorrow will be a drooly dog day for me.
I will be dog sitting due to an oops where a mom dog stepped on puppy breaking his tiny leg.
He will be at the csu vet clinic in the morning so someone has to keep an eye on mom to prevent another oops.

If I am never seen again we all know why. :th
