Preserving Your Harvest

Iowa state has poo-poo'd the Ball Canning book, stating that it has flaws in testing, or outright lack thereof.
This is … a little stunning. Been referring to that book in my family for 2-3 generations.

SO I found that I could order it on amazon cheaper than printing at home.
Not sure if it’s allowed, but can you post the Amazon link? I just searched and did not see anything that matched, just something that was $95!

I do understand what ISU is saying. The OLD books use outdated methods and the newer books are using untested recipes. The last time recipes were actively tested was the 80s, but even those recipes are outdated methods, they still show wax sealed jelly or inverted sealing.

We canned 20 jars of pickles, although we only have 19 jars to show for it because one jar cracked. It was a few years old I now and went through our last move 4 years ago so it likely had a hairlike crack that just gave way. We'r are also making a very large batch of pepper jam. There's only two 8 oz jars left from the last time. This time I should have 16-20 cups of jam. There where a lot of peppers picked from the garden today... DW is happy about it though. She's addicted to the pepper jam.

Yeah, I remember doing wax for jams as a kid with mom and grandmom. Did some cherry jam once, then found it in the cellar with a wax cap 10 years after making it. Got my BF at the time to eat it :D (me too). It was still good, just lost some color. Nobody died. (Totally not doing wax anymore, just something I remembered).
