Preserving Your Harvest

Speaking of salsa... anybody do any salsa verde with green tomatoes? We're going to have some green toms left, I'm sure.

Got a recipe, anyone? One that does not have tomatillos, as I don't have any.
We’ve done green tomato ketchup (from my grandpa recipe), chow-chow (from YouTube recipe), and a jalapeño salsa verde (from our own concoction).
We also slice and “pickle” green tomatoes for frying to use up last of them before frost
 
I'm hoping to get some tomato sauce canned tomorrow. Tonight I put the thawed out tomatoes into to vita mixer, peels, seeds and all, and put it into the fridge until tomorrow.
It's been simmering and thickening all day, looks like the canning part will have to wait until tomorrow. :cool:
 
I made the green tomato salsa a few days ago. Green tomatoes don't have nearly as much juice as ripe ones, so no hours of boiling! I ended up with 12 cup-and-a-half jars. DH didn't care much for it, but I can see me putting this stuff on a lot of things. I'll make it again when I have green tomatoes left at the end of the season.
