I made pickled beets, back in June, 7 pints and 3 quarts. We have already eaten all but 1 jar! I did give my Grandson and a friend, a quart each. I should of planted/pickled more! Obviously, I love beets! Borsch is also a favorite. I have never dehydrated any. How do you use them when dried? I, sometimes, make fruit based slushies, fortifying them with nutrients, from some dried or frozen vegetables, fruits and spices. I am sure the beets would make a delicious powder to add!
 
I have a bunch of peaches that I need to get canned up asap, and I planned on doing it tomorrow morning. However a girlfriend just made a pedicure appointment for us tomorrow and I will need to leave the house at 10:30 am.
Can I peal and slice the peaches in the morning and can them in the afternoon if I don't get them canned right away in the morning? I plan to treat to prevent browning ... but to wait about 4 hours may be too long. What do you think?

Not sure about the browning... Never canned peaches here. Mine just got gobbled up. I imagine the peaches would keep fine in the fridge for the 4 hours if not on the counter even, but didn't realize peaches might brown. Always associated browning that with apples, pears and potatoes.
 
3 large sunflower heads are hanging to dry in the sunroom now. The largest was every bit of 11ft in height! I didn't think to measure the heads diameters, but each has to be over 1ft. They're full of nice, fat seeds/shells with black and white stripes. I tasted a seed, and while it's wasn't dried fully, it was delicious. It was like a water chestnut - nutty, crisp and moist. Once dry, they'll be top quality I bet!

They will brown and lose juice. I would wait til you can do them all the way through the process.

Yes even with lemon juice or fruit fresh.

I think I will do a batch tonight and see how long it takes me to prep a big bowl full.
And tomorrow morning, I will weed the garden until I need to meet the girls. Peaches will be done when I get home.

I prefer to eat the skins when I eat them fresh. I actually ate most of the skins that I peeled off the peaches last time I canned them.

I froze them with the skins on, but I haven't canned them that way.
