Preserving Your Harvest

I don't understand why the cranberry producers don't sell frozen cranberries all year long. Wish they did.
I think my local grocery uses it as a bit of a loss leader in the produce department. They don't sell frozen berries, just the fresh ones. I need to stock up, as I used all the frozen cranberries I had last year to make cranberry/apple jam, which turned out to be hubby's favorite. I'll be making a lot of that this year.

(looking for the recipe I used... where did I put it?!?)

That sounds good, but I'll have to wait until November to get more cranberries. Used all my frozen ones for the spicy cranberry salsa.
 
Salsa day. I canned 7 pints and have a half pint in the fridge. This one is spicy. 5 pounds of tomatoes, one pound of onions and 2 pounds of peppers.

A half pound of the peppers were jalapenos and 4 habaneros, chopped fine with the seeds and membranes left in. The rest were bell peppers, red, orange and yellow.

The recipe called for peeling and coring the tomatoes which I did. But I hate to waste anything I grow so I pureed the skins and cores and added them to the pot. That gave the salsa a nice red color, plus tomato skins contain a lot of lycopene, good for the eyes.
