Seasoning mix
1tbl plus 2 tsp (I half the salt )
1 1/4 tsp dry mustard
1 1/4 tsp paprika
1tsp garlic powder
1tsp black pepper
3/4 tsp white pepper
3/4 tsp onion powder
3/4 tsp cayenne
1/4 tsp dried thyme
Rabbit
1rabbit
1/2 cup flour
Oil for frying
2 cups chopped onion
2 cups chopped bell pepper
1 cup chopped celery
1/4 cup mined jalapeno
2 1/2 cups canned tomatoes
2 bay leaves
1 type Tabasco
2 cups chicken or rabbit stock
1/2 cup tomato sauce
1tsp minced garlic
Cut up the rabbit sprinkle 2 1/2 tsp of seasoning mix on cut rabbit
Add 1 tbls of seasoning to flour and coat rabbit pieces
Fry rabbit in hot oil till lightly browned
Discard most of the oil
Add veggies and cook 3 minutes
Add tomatoes the rest of the seasoning, bay leaves and Tabasco
Stir in tomato sauce stock and garlic
Add rabbit and reduce heat to very low ( I use oven for this step)
Simmer till tender (about 45 minutes)
Serve over rice.
