Hi, welcome to BYC.

The color of egg shells may vary, but inside they're all the same. The only difference you might notice is dependent upon the hen's diet, not the shell color.

Shell color has absolutely no effect on flavor. People sometimes thinks it does -- this is mainly due to the fact that brown eggs were not as commonly produced in commercial operations, and were mainly produced by smaller, specialty operations that were more likely to allow hens to free range, feed better quality food, that sort of thing, as opposed to the batter operations of a half million or more hens producing white eggs for the mass market on the cheapest diet possible under poor conditions -- bad conditions means poor quality eggs, which is reflected in the flavor.

What does affect flavor are the factors I alluded to above -- quality of life issues like access to sunlight, proper diet with an assortment of foods, ability to roam around a bit.

Any chicken you raise under more natural conditions will have a better tasting egg.

Finally, the commercial feed also makes a bit of a difference. Some people feel that birds raised on vegetable based feeds or natural feeds tend to produce eggs that taste better. I know quite a few people have commented that they like the flavor that Purina's line of all natural feeds produces. I think Purina calls it their "Sunfresh" line or something to that effect. I've bought it, but my regular feed store doesn't carry it, I have to go about 15-20 miles on a special trip, so don't go to that store, a TSC location, very often.

I've wanted a blue egg layer for ages, had to hatch 4 lots of eggs out before I finally got a blue egg laying hen (Old Cotswold Legbar). Was so excited to eat a blue egg, had it boiled with some others - and I didn't like it! I thought it had a different texture to the others. I've heard of other people saying they taste different- maybe a blind taste test is needed

I have a variety of eggs for my basket, and the blue , pink, and green taste the same as my brown or white ones. I feed them all the same and they get to free range every day, so they takst alike.

mr.mc. :

but some peeps say brown eggs are better & better for you than white eggs.

This is because as Denninmi said, white eggs usually come from the supermarket. Supermarket eggs come from hens who live in battery cages and have poor nutrition. Brown egg laying hens are not used in the batterys, so when you get brown eggs they are almost always from a smaller producer (such as us BYC peeps).

You could take any brown egg laying hen and put her in the factory egg setting and her eggs would still be brown, but they would also be the poor quality eggs you find in the supermarket for a buck a dozen. Similarly, you could take a white egg laying hen from the factory, put her in my backyard, and in a short time we would have fantastic high quality white shelled eggs.

Shell color makes absolutely no difference. It's all about diet and quality of life.
