Inconsistent Egg Laying

Most hens don't lay every day. Different breeds lay differently. What breeds do you have? This time of year laying is on the decline. Your best production will be in early spring to midsummer.
 
Your leghorns should lay 3-7 eggs a week. This time of year I would be happy to get 3-4. Ameraucana are poor layers generally. They tend to lay and stop. Easter eggers can be better layers.

You will probably need to wait a few months. After the winter solstice under increasing daylight your production should start to pick up.
