I agree. My youngest made it once, she ate a few pieces and said it wasn't bad, but she'd made wayyyy too much and didn't eat it all. I have a friend who has a wheat allergy so she is always trying to find new and edible ideas for stuff, but she hates mushrooms. I would probably do the mushroom bun thing too! It sounds really good. What about corn tortillas? When my youngest was seeing a nutritionist they suggested using tortillas instead of bread to cut down on carbs. Not sure if corn tortillas would be any safer for you than the wheat ones though.
Corn is very high on the glycemic index. There is a reason they make HFCS out of it. Most dietitians don't even really consider it a vegetable but more of a grain.

Luckily it was a new roll and I haven't cut it yet. That's the next part and the part I've kinda been avoiding. My biggest struggle was getting the pull ties to go through the hardware cloth and the chicken wire it was covering and then back through to the right side. By the time I was done I was thinking my fingers would stop working altogether.

Yes it is a grain. Peas kick the sugar too. :(
 
Well that sucks. Hopefully once you get things stabilized you can add back things like fruits and peas in moderation.

It is a whole retraining of the palate. I will probably find what works and just live without the things that don't.

When we go to lunch with our carb-sensitive friends we go to Carl's Jr. and he gets a hamburger with extra leaf lettuce for the bun. Works, and he says he has grown to like his burgers that way.
