It is actually quite easy.
For chicken soup I start similarly. I get my giant pot going with water, bullion, garlic, salt, pepper canned chicken stock if I have it and a washed whole bird.
Making a smaller pot is the same just with less bird.
Veggie soup I do with veggie broth, the same spices and simmer it to develop the flavors. Celery, onions and carrots early on to get that flavor going then add taters, peas, corn and whatever with just enough time to cook them through.
I make home made egg noodles which is also simple.
Packaged noodles work in a pinch.
