Yes it can be done without. I like potato in my beans. Can be sweet potato too. Yes it's pressure canned for 90 minutes. So what were the egg recipes, sorry I missed them.:tongue

What I based the pickled eggs on. I didn't add the onions, as these are literally tester batches. We want to see which one(s) we like (having NEVER had pickled eggs before), so we can make them (possibly to sell at the farmers market).
 
You folks will get a kick out of this... Mom has been living vicariously through my poultry adventures. I was teasing her last night telling her to have my uncle build her a coop and i'd bring four layers and 50# of feed up. She promptly informed me that she couldn't have birds in her town... Well, I know better....

I PM'd a girl down the road from her who is a byc'er to ask that she checkout her lot, which I'm sure meets city guidelines. So Mom may soon get a bird obsessed visitor to explain her local laws. Just having fun.

I can do a bird in about 1:30.... only that's hours and minutes, not minutes and seconds. I stand in awe/jealousy of their skill.

Granted, I could go a whole lot faster if I weren't mucking about with dry plucking and THEN skinning 'coz my evisceration job was just that bad, but I'd still be pretty slow either way.
Three birds took me from about 1pm-4:30pm with an ice cream break. I want to talk my DH into letting me buy a yardbird with our tax refund.

I have a yard bird.. plucks 2 birds in under a min... but it needs feathers pulled out after a couple of heritage birds or 4 cx mixes.. the feathers get hung up and stall the machine... easy to clean when done.. good if your doing at least 4 birds.

Sorry D I don't have any pix. I had a bushel of beans so I started with five pounds of potatoes and about 3 pounds of carrots and maybe 8 pounds of onions and probably four pounds of garlic. I put a quarter pound of bacon in every quart jar. I did dice it up fine. Then I mixed the veg and put a big spoonful in each jar. Then topped the jar off with cut beans and then added stock. Sorry for not being exact.

So, let's convert your favorite recipe... How do you cook green beans? Prepare the aromatics, meat and beans... measure into jars and cover with stock. add spices that you like and pressure can for 90 minutes.

Rea, look at featherman... I know ralph and others swear by yardbird, but I love my plucker.
