Also with substituting cauliflower for potatoes and rice. Keep in mind both (potatoes and rice) are blank pallets and take on flavors of what you add. Cauliflower has a cabbage taste, but ever so mild. So when using it as a substitute, prepare with other "OK" ingredients that will over power that cabbage taste. So for example, when I feed DW mashed Cauliflower instead of Mashed taters, I added bacon, sour cream, butter, pepper and cheese. For a cauliflower rice, I'd definitely cook it in stock and maybe add some Chinese 5 spice or Sriracha. Just a thought. If I cook dinner tonight (we ate a late lunch), it will be schezawan pork without bell pepper cause some idiot forgot to pick it up at the store today.

Everything is better with bacon! Yellow crook-neck squash fried in bacon grease and topped with crispy bacon crumbles. You will not miss potatoes!

Good to know in advance that it has its own flavor. I would not be happy if I expected close to mashed taters and got mashed cabbage flavor.
I will plan on having bacon at the ready lol.

It's ok. We can still use the pretend soda. The fake sweetener has not messed with hubs glucose readings so far.
I don't like the taste of any soda anymore so I am all good with not drinking it.

And x2 on the cauliflower rice. I love cauliflower but if I am trying to use cauliflower in place of rice, it needs a little help in the flavor department. Adding other aromatics like garlic, ginger, onions etc depending on what you are making, really seems to help. And my dad makes (and loves!) mashed cauliflower made the way Bob described.

I have an old school potato ricer, hand operated. It looks like a giant garlic press. Fast, easy & not a big electric appliance. Goes in the dishwasher. Works on lots of things besides potatoes!
 
Henny, I can't remember the last time I drank a soda. There's only one I like and I only like it from the source or on Ice cream. Everything I drink is bad for you guys though. I drink a ton of unsweetened tea, black coffee and Canadian Whiskey(well maybe not a ton if it). During the summer I force myself to drink Gatorade for the electrolytes. Spicy Clamato Juice is good for replacing electrolytes. But I also have Potassium and Magnesium Powdered drink mixes to avoid muscle cramps.
