Also with substituting cauliflower for potatoes and rice. Keep in mind both (potatoes and rice) are blank pallets and take on flavors of what you add. Cauliflower has a cabbage taste, but ever so mild. So when using it as a substitute, prepare with other "OK" ingredients that will over power that cabbage taste. So for example, when I feed DW mashed Cauliflower instead of Mashed taters, I added bacon, sour cream, butter, pepper and cheese. For a cauliflower rice, I'd definitely cook it in stock and maybe add some Chinese 5 spice or Sriracha. Just a thought. If I cook dinner tonight (we ate a late lunch), it will be schezawan pork without bell pepper cause some idiot forgot to pick it up at the store today.

I have an old school potato ricer, hand operated. It looks like a giant garlic press. Fast, easy & not a big electric appliance. Goes in the dishwasher. Works on lots of things besides potatoes!
And x2 on the cauliflower rice. I love cauliflower but if I am trying to use cauliflower in place of rice, it needs a little help in the flavor department. Adding other aromatics like garlic, ginger, onions etc depending on what you are making, really seems to help.
