Link to article was posted above.....the albumen gets THINNER with age. And they only looked at hens @ 30 wks and 60 wks; my understanding is that the viscosity continues to decline as hen ages. ([ believe I phrased it correctly this time.Gotcha! However, it sounds like they might actually get more viscous with older birds? Maybe @BY Bob can find that article.

As a hen ages, the whites (or albumen) in their eggs naturally gets thinner, and since it's more difficult for the shell to encase a watery substance, the shell can end up with bumps and ridges.
