Pasteurization is the process of treating foods with mild heat, usually to less than boiling, 100 °C (212 °F), to eliminate pathogens. It is usually done to milk.

So they are cracking the eggs out of the shells, mixing them, and then heating the pre-scrambled eggs to a temperature sufficient to kill the E. coli but not actually cook them. They are then packaged and refrigerated.

Many people believe that the process makes them taste odd or funny.
It can be done in the shell, they are available online. I have not tried them.

Shell eggs can be pasteurized by a processor if the United States Food and Drug Administration accepted the process for the destruction of Salmonella. Pasteurized shell eggs are now available at some grocery stores. Like all eggs, they must be kept refrigerated to retain quality. The equipment to pasteurize shell eggs isn't available for home use, and it is very difficult to pasteurize shell eggs at home without cooking the contents of the egg.

Just wanted to share something with my chook friends; yesterday I passed my Jishukan brown-belt grading! It was quite a tough slog, especially during Covid, but black-belt will be much tougher!

18F yesterday and windy. Here's Peanut. She's had to fend off "helpful" pecks grooming those shoulder pins coming out. "Thanks, no, please don't"
(Popcorn tries again)
"I said, no. Really, I'm fine!"
(Popcorn pecks lightly again)
"Hey! No! I mean it! Enough!" (Peanut gives Popcorn two pecks on her face, Popcorn finally stops)

I forget?, tell me again what breed they are.
Buckeyes. Supposed to be, but they are hatchery stock and I don't think they are as dark as Buckeyes "should" be. My neighbor friend had some Buckeye bantams which were quite dark. Hazel is the most mahogany of this bunch. They are all personable, and fairly chatty which is very nice.
 
Beautiful shot. She looks great, all alert, she looks healthy to my newbie eyes!
I really think she is healthy now. And she is eating a lot to make up for all that time she wasn’t eating anything much. I need to weigh her again but for now early morning is for Maggie.
