I forgot to mention stress. I know your husband has a high stress job. It's important for him to not get so stressed as it will cause his liver to release stored glucose for that fight or flight response. These days we only end up with high blood sugars from stress.
The good thing is meat is lower in carbs and very filling, so he can continue to enjoy that if he already does.
Grinding up fruit is a good idea, just remember what a serving of fruit is and don't grind up multiple items. Would it depress you to know that a serving is half of a banana, and sometimes half an apple if they are large. I personally limit fruit because of the sugars.

Berries are a better choice.
The other thing you need to be aware of is glycemic index of foods, and how fast or slow foods are digested down. Most fruit had a high glycemic index and will rapidly spike blood sugars. Things like nuts, and dry beans have a lower number and are digested more slowly so there isn't a spike. So knowing these numbers and where foods fall can help too.
