I had moved to frittata rather than Quiche (easier without a crust) and I love them all. Recent favorites (all with lots of cheese):
- Bacon, leek and potato
- Red pepper and goats cheese
- Broccoli and bacon
OK now I am hungry!

I have been experimenting with tofu, stir fry vegetables and seafood lately. Many recipes and sauces have been used. (Even oyster sauce) I’m not going the kimchi route just yet.

I wonder what would happen if I was to run one of my Barred Rocks over a laser scanner in Walmart? Coco does look like a walking barcode! :old 🤔
Might end up purchasing a roll of paper towels hahaha!

Just be happy she isn't one of those with pencilling that look those new barcodes! Now wonder what will happen if I scan one of those Dark Brahmas! :lau

I made the quiche up as I went. 4 slices of bacon, sauted onion and mushrooms with oregano and thyme. Deglazed the pan with a splash of chardonnay. Added shredded swiss. All in all, one of the best I've ever made! Told my husband with all these eggs, quiche and fritatas are going to be on the menu more often!

Only 2 eggs today. But 13 in 5 days from 3 hens is pretty good!

Is there a recipe tax?

Wow yes that is a lot of eggs! I can't eat cheese so can be as enthusiastic as you can, but I do enjoy a nice over-easy or poached egg on my home made bread :)

I thank my girls whenever I gather eggs: Thanks ladies for your contribution to my lunch!
