I have never heard of doing that. I know you can freeze eggs. I might try that for baking. I cannot imagine buying eggs at a store now!We've now got 50 eggs in buckets of hydrated lime water in the hope that we can use them during winter. Have any of you tried this method of fresh egg preservation, and did it work for you? I'm thinking we should be able to have 100 or more in storage by the time winter hits.

Bed-time at the Palace has always been very uneventful but with the little ladies it has got complicated.
The Princesses prefer the end spot to roost - up against the wall. Maggie in particular really, really, really, wants that spot. But the only way to guarantee that spot is to go up to bed first. Maggie usually does go to bed first to secure 'her' spot, but sometimes one of the other Princesses gets there first.
Tonight, Maggie was last to bed and so was furthest from the wall.
Well, that creates complications for the little ladies. The other two Princesses don't seem bothered when the little ladies approach in order to fly up to the top of the window. Not Maggie, she wants them off the roost. She didn't actually peck them, but she ran them off.
She did that over and over and over again.
It was getting dark so against my better judgement I intervened and picked Elizabeth off the roost and put her back the other side of Maggie. Elizabeth doesn't seem to care very much what position on the roost she gets so I didn't feel too bad about it.
Immediately the little ladies took the opportunity and flew up to the top of the window (it is getting to be a tight fit). Now all is harmony. The little ladies are up on the window and order is restored.

It's called "glassing." From what I read it is a method used in previous centuries and apparently works very well, purportedly keeping eggs fresh up to two years in ideal circumstances. Our one neighbor family that really appreciated getting eggs from us moved away. We've given them to other neighbors but they seem less than enthusiastic about it so we decided to try preserving them. We only get a small surplus anyway, so it takes a while to build up a dozen extra eggs to give away. We'll see how it turns out, I guess.My wife keeps talking about this.
