Also made passion fruit curd, it can be frozen:
  • 3 oz passion fruit juice
  • 3 oz sugar
  • 2 eggs
  • 2 T butter cut into small pieces
Over double boiler stir together first three ingredients, do not let boil. Once cooked add in butter one piece at a time.

Personally not going to stress out about what is no longer approved. My mom thought I was crazy for adding citric acid to tomatoes, boiling jars instead of sealing in the oven.. they never got sick with the old methods. If it's in a book, it's good enough for me.
 
crab apple jelly is on the list for today, as well as shelling some beans. I love this time of year but it makes me so tired and my feet HURT! but I will be glad come December to have it all. Anyone have a good pickled green bean canning recipe?
crab apple jelly sounds delicious! Does it retain some of the sour after adding a bunch of sugar? I love the sour taste of crab apples.

Thanks! That's actually not a bad deal. I got the 2lb package for $10. It will arrive tomorrow. Now I can go to the packing house and pick up a pork belly! Yea!!! While it's not my harvest, I'll be sure to post about making bacon on this thread once I start the process. It takes two weeks to cure, then a day's work to smoke, cool, slice and vacuum seal it all.
